Our Extra Virgin Oil
Our Land
Nestled in the hilly terrain near Orvieto in Umbria, often called the “green heart of Italy,” our land offers the perfect environment for producing premium olive oil. Spanning six hectares, the Casale Zeno estate is home to over 1000 young olive trees, cultivated organically and certified as “biologico”. These trees, a harmonious mix of Moraiolo, Frantoio, and Leccino varieties, are meticulously fertilized, pruned, and harvested by hand to ensure the highest quality.
Our Olive Oil
Our olives are harvested from late October to November, depending on weather conditions, and transported to our trusted “frantoio” (mill) within 48 hours to preserve their freshness. According to European Union standards, extra virgin olive oil (EVO) must have an acidity level below 0.8%. Our oil boasts an impressive acidity level of just 0.25%, reflecting the exceptional quality of our olives, precise processing methods, and careful storage practices.
Production
Our independent frantoio is just 5 minutes drive from the farmhouse, in 1954 Il Vecchio Mulino in Castel Viscardo opened using the traditional pressing method using fistulas and ancient millstones. Today the oil mill has been renovated and is equipped with the best modern machinery and run by Ida and Aldo and their children. The modern cold extraction and continuous cycle system which allows them to obtain an extra virgin olive oil without altering its characteristics. They hold certification for the processing of organic olives.
